Mrs. Santa’s Notes on Tea
The tea table top is the most important element of your tea-behind the food of course! Use your prettiest linens, china, silver, and any crystal you have for sparkle. Add mirrors as well.
For linens you can use your family cloths, bed sheets, or pretty yardage from the fabric store all layered on the table. For a serving table place boxes, cans, or other things under the cloths to make Different heights for serving plates.
The centerpieces may be anything in season, hats, or plants that matches your theme or color. There are no rules so go for it. The food is part of the décor so be sure that it is in small pieces and beautifully decorated and arranged. Fresh flowers are a wonderful addition if they won’t bust the budget!
Tea Salad Sandwiches
These salads can be made 1 day ahead.
Curried Egg and Tarragon Chicken Salad Sandwiches Fills about 100 cocktail croissants. Fill just before using
Dressing Mix:
3 Tbs. Milk
6 oz. Cream Cheese
Add:
1 qt. Mayonnaise
1/4-cup fresh minced parsley 1 tsp. salt
½ tsp. White pepper
1 tsp. dry powdered onion (not fresh) 2 cups finely minced celery
¼ cup wine vinegar
1 tsp. sugar
For Tarragon Chicken Salad:
Place in bowl:
¼ cup minced fresh Tarragon
2 lbs. diced cooked white chicken meat 1/2 cup chopped walnuts
1 cup chopped dried apricots
Toss with just enough dressing to make a moist filling.
For Curried Egg Salad:
Place in bowl:
3 doz. chopped hard-boiled eggs, and 1/2-tsp. curry Powder, toss with enough dressing to make a moist filling.
Taste and adjust salt and pepper.
Ham Salad
2 cups chopped ham
¼ cup chopped celery& dressing to moisten
